A Christmas Cook-n-Carol
WINTER CANDY, COOKIES, AND CAKE
Publicity
Give instructions as to the ingredients, decorations, or containers each guest should bring.
Preparty Preparation
Make plans with the committee or officer in charge of mission activities. Together decide what Christmas goodies to prepare, and where and when to take them. Before you plan for the whole group to deliver the goodies and go caroling, check with the supervisor, nurse, or family involved. Find a time that is satisfactory to the shut-in.
Make a list of the goodies to be prepared and the ingredients needed. Get to work when the guests arrive. Try to choose a time when the cooking and caroling may be done on the same day.
Cook Time
Work in small groups to prepare any of these Christmas goodies:
Date-Nut Squares with Coconut
1 lb. dates, chopped ½ tsp. vanilla
1 cup sugar 1 cup chopped nuts
1 stick butter Shredded coconut
2 cups Rice Krispies
Cook sugar, dates, and butter until dates are soft (about ten minutes). Remove from heat and add Rice Krispies, nuts, and vanilla. Spread on a greased cookie sheet. Sprinkle with coconut
(Pat lightly so it will stick). Let cool. Cut into squares.
Peanut Brittle
1 ½ cups white sugar
½ cup white Karo syrup
2 cups raw peanuts
1 scant tbsp. soda
Boil first three ingredients until golden brown and will spin thread. Put in soda during the last few minutes of cooking. Cook in a large pot, for the soda will make it boil up. Pour on buttered
cookie sheet. Break up when cold.
Pralines
1 cup white sugar 1 cup buttermilk
1 cup brown sugar 1 tsp. vanilla
1/2 tsp. soda 2 tbsp. butter
1/8 tsp. salt 1 stick butter
l 1/2 cups of pecan halves
Combine sugar, soda, salt, and buttermilk in a four-quart sauce pan. Cook until mixture spins a thread. Remove from the heat and add vanilla, butter, and pecans. Beat until it starts to get thick. Place over low heat to keep candy soft while dropping on greased cookie sheet. Form patties of about three inches in diameter. (Makes about fifteen patties.)
Quick Chocolate Fudge
1 stick butter 1 lb. box confectioner's sugar
1/4 cup water 1 pinch salt
1/2 cup powdered milk 1 tsp. vanilla
1/2 cup cocoa (scant)
Melt the stick of butter in * cup of water in a saucepan on a stove or hotplate. (This is the only cooking required.) Add the other ingredients as listed. Mix well. Pour into a buttered square
baking dish or pie pan. Press halves or chopped nuts over the top if desired. Place candy in the refrigerator for about one-half hour. Remove and cut into bite-sized pieces. Serve immediately or keep covered in refrigerator for several days.
Nutty Fingers
1 lb. butter
1 cup confectioner's sugar
4 cups flour
3 tsp. vanilla flavoring
1 cup chopped nuts
Mix all ingredients thoroughly. Bake for twenty minutes on an ungreased cookie sheet in a 3500 oven. Roll in additional confectioner's sugar after removing from oven for cooling
Prune Cake
2 ½ cups flour 3 eggs
1 cup buttermilk 1 tsp, soda
1 cup Wesson oil 1 tsp. cinnamon
1 ½ cups sugar 1 tsp. allspice
1 cup cooked prunes
1 cup chopped pecans
1 cup cooked raisins
Sift dry ingredients into mixing bowl, add liquid ingredients and the three eggs, slightly beaten. Fold in nuts. Bake at 3750 for about fifty minutes.
Filling
1 cup sugar 1/2 tsp. soda
1/2 cup buttermilk 1 tsp. white Karo
1/2 cup butter 1/2 tsp. vanilla
Mix all ingredients. Cook to a thin syrup. Pour over the cake while it is still hot. (Make this cake at the party and deliver it later.)
Apricot Chews
Blend 2/3 cup sweetened condensed milk (not evaporated),
2 cups Raked coconut,
dash of salt,
1 cup finely chopped uncooked dried apricots.
Shape into 24 balls and put on greased cookie sheets. Bake in moderate oven (3500 F.) twelve to fifteen minutes. Remove at once from sheet. Makes about two dozen.
Chow Candy Clusters
In a heavy saucepan combine two 6-ounce packages of chocolate chips and two 6-ounce packages of butterscotch chips. Melt, stirring constantly, over low heat. Remove from heat and stir in two 3-ounce cans or one 5J~-ounce can chow mein noodles. Add 2 cups
cashews or peanuts, if desired. Mix quickly to coat each noodle. Dip out tablespoonfuls on waxed paper; cool. Use one-half of each of the ingredients for a half batch. For variations, use all chocolate chips, all butterscotch chips, or try lemon chips for an unusual taste treat.
After the Christmas "goodies" are ready for packing, get to work. Fix attractive trays or gift boxes to take to the shut-ins. Serve hot chocolate and "samples" of the goodies to all participants. Before leaving the church, join in a prayer for the shut-ins and the visits.
Carol Time
Visit one or more shut-ins. Sing at least two carols. Let two members go inside to take the goodies and extend holiday greetings.
